The warmer weather has me craving lighter flavors and recipes, but Spring has not yet fully...well, Sprung! This recipe is a great "somewhere in the middle" recipe for either spring or late summer as the flowers pop, or leaves start to fall!
This one features our friends "Still There Shine Sauce" -Yard Bird Rubs. These guys are truly fantastic, and their flavors are unbelievably good, and unique!

Serves 4
Ingredients
4 - 3 oz. Chicken Breasts
1 Tbsp. "Still There Shine Rub- Yard Bird
1 Cup Blueberries- Cut in 1/2
1/2 Cup diced Granny Smith Apples
1 Tbsp. "original Sin" Lust Monk Mustard
1 tsp lemon Juice
1 Tbsp. Olive Oil
S&P to taste
1/4 Sliced Red Onion
1/2 Small diced Jalapeno
4-5 leaves Basil- torn
Method:
Heat your grill to medium-high heat
Trim the chicken breast, and season with the Still There Rub
Grill 5-7 minutes on each side- turning once until the internal temp reaches 165F Set aside
In a bowl, add the mustard, olive oil, lemon juice, salt and pepper, and whisk together.
Next, add the sliced onion, blueberries, torn basil, diced apple and jalapeno. Toss well to coat the ingredients
This "salsa" can be kept in the fridge for up to 5 days, and is great on pork, and especially fish.
